Lots of deer have been killed with cheap SKS rifles in 7. 62mm x 39mm. The round is ballistically very close to the 30/30.
As for accuracy both rounds will easily hit 100+ yards in a good rifle.
The 5. 45mm x 39mm would be fast but very small for my taste.
You’ll do ok using the 7. 62mm x 39mm.

I’ve taken deer cleanly with the 7. 62×39 round out of a decent rifle (not an AK knock off) but have no experience with the 5. 45 round yet. Both rounds have the same potential accuracy when fired from a quality barrel and receiver.
I wouldn’t shoot a deer with the 5. 45 round but would have no worries with the 7. 62.
As for the folding wire stock, I have never liked the folding stocks I have used. They don’t feel stable and there is rarely a place to put your cheek. I’d stick with the conventional stock.
The 7. 62 isn’t enough for deer, and the 5. 45 is even worse. If you want to hunt deer, have the decency to use an adequate cartridge to do the job humanely. Neither is the AK a reasonable choice for home defense. Instead of starting with a “cool gun” and working from there, you should start with your intended purposes and choose a firearm well suited to the task. Your approach is akin to asking advise on whether a claw hammer or a ball-peen hammer is better for tightening a nut on a bolt, when what you need is a wrench.
Speaking strictly of power, the 7. 62×39 mm Soviet has it all over the 5. 45. We are talking about a . 22 caliber varmint round versus a . 30 caliber cartridge that is at least similar to the . 30-30 WCF.
A folding stock semi-automatic rifle will be a pretty miserable choice for a hunting rifle. For hunting, you really NEED the stabilith of an immovable stock.
You will also need some five round magazines due to magazine capacity limitations for hunting.

7. 62X39 for sure when it comes to hunting.
For home defense its too powerful, it will go through the person you are aiming at and the next two rooms behind them.
Best bet for home defense is a shotgun or a pistol with an attached light.

Some states don’t allow . 22 on deer- that leaves out the 5. 45. 7. 62×39 Midway or Federal soft-point 125 grain bullet has taken plenty of deer. Russian Wolf brand has a similar soft point. Under folding stocks not the best, the side folding types like AKM/74 airborne trooper pattern with good latch fairly usable. Midway . 310 bullet known to be accurate in SKS and AK. The Federal . 308 bullet was meant more for the Ruger mini30. Wolf and Sellor&Beloit hunting ammo supposed to be fairly good in SKS- haven’t tried them myself.
You can not hunt deer with a rifle that has a magazine capacity of more than 5 rounds. . . . If you want to hunt with an AK that is the first issue you have to address — finding a 5 round box magazine. . . #2 The 7. 62X39MM is an excellent deer cartridge. It has similar ballistics as a 30/30. . . . . #3 – I’m not positive but it may not be legal to have a collapsable stock on a hunting rifle – ANYONE care to clarify?. . . . . . The SKS or Ruger Mini 30 would be a better choice for deer if you want a semi auto and both are polite looking — HOME DEFENSE AK47?– Really bad idea – heres why – sure it will get the job done – BUT lets say you shot an attacker coming at you in your home — You may be legaly justified but in most cases they will still have a grand jury hearing to see if you will be charged with murder — at this point do you really want some overzealous jerk district attorney holding an AK 47 up in front of a jury???? Face the facts! An AK47 IS NOT a polite looking weapon — It could sway a grand jury to charge you with murder if they dont like the looks of the gun. . . . For home defence get a plain boring looking shotgun — do not pull a military type weapon out when threatened! It will look as if you were waiting to shoot some loser breaking into your house. . . . Hey – I like AK’s too and own a few myself — but that is the last gun on the planet I would pull out if someone is sneaking around inside my house at 4 in the morning. . . Get a Remington 870 or a Mossberg 500 shotgun with NO tactical stuff on it and a regular stock. . . . . . . —–
The 5. 45×39mm round is a . 22 caliber therefore a varmint round. It is NOT suitable for deer hunting. Magazine capacity aside, the standard 7. 62×39mm AK-47 round will take deer at the same range roughly as the . 30-30 Winchester carbine. However if you are going to hunt deer you should just use a deer rifle. If you must use the 7. 62×39 then you must make sure the magazine capacity of your AK is legal for deer hunting and you must find soft-point ammo to hunt with.
