Depends, if you are hunting elk or deer, a 10x should be suitable, but 500 yards is a long shot, especially with a 20″ barrel. You failed to mention chambering.
If you want to target shoot, at 500 yards with a 10 or 12x you will have a hard time finding the target. I regularly target shoot to 600 yards with a . 308 and a 14x, and the man sized target is slightly larger than a postage stamp in the scope.
ADDED: nice thing about a . 308 is that there is a LOT of ballistics info out there due to it being the main Marine Corps sniper round (and poular military/LEA round) until recently (its still in use, btw). To give you an idea, at 600 yards, my holdover is still about 20″ with a 300 yard zero. . . . .

People shot full-size silhouettes with iron sights for many, many years, and much long range competition is limited to iron sights today.
On the other hand, I’ve seen people with 25 power scopes at 200 yard municipal ranges that could barely keep it on paper.
For me? Well, I find a 3-9x scope is fine for 500 yard range work, but if I actually had to pick out a target at that range that wasn’t bright white or orange with a bullseye painted on it, I would probably want more.
